Brindle Food Co. is Carlos & Nicole. Nicole took her Italian heritage, Niagara upbringing, knowledge of seasonal ingredients and pastry training to create incredible desserts. She has taken great inspiration by her Grandpa’s vegetable garden and her mom’s pastry recipes. Carlos was born in the Philippines before moving to North America when he was 3 years old. He drew on a range of cultural influences, gravitating towards experimental fine dining restaurants, and incorporated ingredients that he grew up with, in large part due to his Pastaio position at the Japanese-Italian restaurant, Kissa Tanto, in Vancouver. Today, he makes the fresh pasta and savoury dishes on the menu. Together Carlos and Nicole have more than 25 years of experience in top restaurants. They created Brindle Food Co. as a place to indulge their love of food and its power – from making pasta and growing vegetables – and, most importantly, share their culinary creations with others.
