Chef Che’s Signature Salsa Verde Recipe

This week on our Instagram, Chef Che Galvan taught our VP of Creative Elle Daftarian how to make his signature Salsa Verde. Ever since he started making it, he’s been getting requests to serve it by the gallon!

Chef Che’s Signature Salsa Verde Recipe
- 6 tomatillos
- 1 green bell pepper
- 1 Anaheim pepper
- 4 jalapeños
- 1 white onion
- 6 garlic cloves.
- 1 bunch of cilantro
- 1 avocado
- 1/4 cup white vinegar
- 3 to 4 limes
- 1 cube of chicken bouillon
- 1 teaspoon cumin
- Salt + Pepper to taste
Directions
- In a large pot of boiling water, blanche the tomatillos, green bell pepper, Anaheim pepper, jalapeños and white onion.
- Remove everything from the boiling water when tomatillos start to dull in color, make sure they are still a little green.
- Add remaining ingredients (except the lime juice and reserve half the cilantro) to a blender and blend until smooth.
- Finely chop remaining cilantro, add to blender.
- Add lime juice and pulse until combined. Taste and season with salt and pepper as needed.
- Enjoy however you choose! We like it on eggs, tacos, rice bowls… the possibilities are endless!
